Ingredients

  • 1 lb. Ground turkey
  • 1 tbsp. Olive oil
  • 1 Medium onion, chopped
  • 2 Garlic cloves, minced
  • 1 Large sweet potato, peeled and diced into small pieces
  • 1/2 tsp. Ground cumin
  • 1/2 tsp. Paprika
  • Salt and pepper to taste
  • 1 cup Low-sodium chicken broth
  • 2 cups Packed baby spinach leaves
  • 1/4 cup Chopped fresh cilantro

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the ground turkey, and cook until browned about 5-7 minutes.
  2. Add the onion and garlic to the skillet, and sauté until softened about 2-3 minutes.
  3. Add the diced sweet potato to the skillet and sauté until it has softened slightly, about 5-7 minutes.
  4. Add the ground cumin, paprika, salt, and pepper to the skillet, and stir to combine.
  5. Pour in the chicken broth, and simmer until the sweet potato is tender and the liquid has reduced about 10-15 minutes.
  6. Add the baby spinach leaves to the skillet, and stir until they have wilted.
  7. Sprinkle the chopped cilantro over the top of the skillet.
  8. Serve hot, and enjoy!
