Ingredients
- 1 lb. Ground turkey
- 1 tbsp. Olive oil
- 1 Medium onion, chopped
- 2 Garlic cloves, minced
- 1 Large sweet potato, peeled and diced into small pieces
- 1/2 tsp. Ground cumin
- 1/2 tsp. Paprika
- Salt and pepper to taste
- 1 cup Low-sodium chicken broth
- 2 cups Packed baby spinach leaves
- 1/4 cup Chopped fresh cilantro
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground turkey, and cook until browned about 5-7 minutes.
- Add the onion and garlic to the skillet, and sauté until softened about 2-3 minutes.
- Add the diced sweet potato to the skillet and sauté until it has softened slightly, about 5-7 minutes.
- Add the ground cumin, paprika, salt, and pepper to the skillet, and stir to combine.
- Pour in the chicken broth, and simmer until the sweet potato is tender and the liquid has reduced about 10-15 minutes.
- Add the baby spinach leaves to the skillet, and stir until they have wilted.
- Sprinkle the chopped cilantro over the top of the skillet.
- Serve hot, and enjoy!
