Ingredients
Steak Bites & Zucchini Noddles
- 450g Sirloin steak cut into small cubes
- 2 Zucchini spiralized
- 1 tbsp Olive oil
- 4 tbsp Butter
- 1/4 cup Beef broth
- 1 tbsp Parsley minced
- 1 tsp Fresh lemon thyme
- 2 tbsp Fresh lemon juice
Marinade
- 1 tsp Sweet paprika
- 1 tbsp Fresh lemon juice
- 2 Garlic cloves minced
- 2 tbsp Soy sauce
- 1 tsp Worcestershire Sauce
- 1 tsp Black Pepper
- 1 tbsp Olive oil
Instructions
- Put the steak bites in a bowl with the marinade ingredients (soy sauce, paprika, olive oil, garlic cloves, Worcestershire sauce, black pepper, and lemon juice). Mix and marinate for at least 15 to 20 minutes.
- Heat the olive oil in a large skillet over high heat. Remove the steak from the marinade and save the remaining marinade for later.
- Put a single layer of meat in the skillet. Do not overcrowd the skillet, or the meat will steam, so you may have to work in batches depending on the size of your skillet.
- Cook the steak cubes for 3 to 4 minutes and occasionally stir until golden brown. If needed, repeat with the remaining meat. Add extra olive oil if this is necessary.
- Add butter to the skillet and mix the meat for 1 to 2 minutes. Transfer to a platter and set aside.
- Add the remaining butter, lemon juice, beef broth, and marinade juices to the same skillet.
- To cook the spiralized zucchini noodles, add these and mix for two to three minutes. Stir in the fresh parsley and thyme, then allow the cooking juices to reduce for one minute if the zucchini renders too much water.
- Put the steak bits back in the pan and reheat for one more minute while pushing the zucchini noodles to the side. Serve immediately.
