Ingredients

  • 2 lbs Beef steak cut into 1-inch pieces (striploin, sirloin, or tenderloin)
  • 2 Bell peppers sliced into 1-inch pieces
  • 1 Large zucchini sliced into coins
  • 1 Large red onion sliced into 1-inch pieces

Marinade:

  • ¼ cup Soy sauce (tamari or coconut aminos)
  • ¼ cup Worcestershire sauce
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Olive oil
  • ½ tablespoon Paprika
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 tablespoon Garlic powder
  • 1 teaspoon Dry oregano

Instructions

  1. Slice the steak into 1-inch cubes and place the steak in a sealable waterproof freezer bag.
  2. In a medium bowl, combine the marinade ingredients and pour the mixture into the steak bag.
  3. Make sure the bag is completely sealed, and mix the meat into the marinade by pressing the bag around it.
  4. Put the meat in the fridge for 4-6 hours after marinating.
  5. After marinating the meat, thread it onto skewers with vegetables. Each skewer holds about 4 beef cubes.
  6. Set the grill’s temperature to medium-high heat (350–375°F).
  7. Grill skewers for 10 to 12 minutes, turning them frequently until the desired doneness.
  8. Serve right away. Use oven mitts or tongs to carefully remove the skewers from the grill to avoid burning hands.

Notes:

  • 9g net carbs per skewer, depending on the vegetables used.  For lower carbs, replace bell peppers with more zucchini.
  • Brush skewers with balsamic for extra flavoring while it’s on the grill.
  • Do not use a metal bowl to marinade the beef, as the metal gives the food a funny flavor.
